Description
Blue chanterelles are quite unique and rare mushrooms that are wild-harvested in the Pacific Northwest. Even though they are named “blue chanterelles”, it’s not from the “Cantharellus” genus, but it’s own genus named “Polyozellus”.
Blue chanterelle is a type of funnel-shaped cluster mushrooms with a very smooth texture. They can be sauteed in oil or butter and add into risotto or pasta. Blue chanterelles will last for a week if refrigerated properly.
